Why when I import stored financial institution information some other filled-in fields just disappear?

This is generally a "blank" problem. If there was a field on the form which contained one or more blanks when you exported the financial institution information this field became part of the stored profile. Blanks (spaces) are considered valid characters in Acrobat.

To fix the problem, import the stored profile into a fresh form, clear out the "blank" field to a null value using the DELETE or BACK-SPACE key, and then re-export and replace the stored profile.
